Fresh Tomato Pasta

Ingredients
- 1/2 Cups Wholemeal Pasta (80g)
- 2 Teaspoon Olive Oil (10g)
- 2 Cloves Garlic (6g), crushed
- 2 Tomatoes (334g), chopped
- 1/2 X 400g can Borlotti Beans (117g), rinsed & drained
- 1/2 Cup Basil Leaves (20g), torn
- 20g Low Fat Feta, crumbled
Method
- Cook pasta in a large saucepan of boiling water following packet directions.
- Meanwhile, heat oil in a medium pan over medium-high heat. Add garlic and tomatoes. Cook, stirring, for 2-3 minutes or until softened. Add beans and heat through.
- Drain pasta and return to pan. Toss tomato mixture through pasta with the basil. Season well with freshly ground black pepper. Divide between serving bowls and top with crumbled feta.
Beef Burrito

Ingredients
- 2 Wholegrain Tortillas (80g)
- 40g Avocado, mashed
- 20g Reduced Fat Tasty Cheese, grated
- 40g Mixed Salad Leaves, shredded
- 1 Carrot (61g), grated
- 1/2 Red Capsicum (78g), thinly sliced
- 100g Roast Beef Slices, Cooked, thinly sliced
- 2 Teaspoons Sweet Chilli Sauce (10g)
Method
- Preheat a sandwich press. Place tortillas onto a clean work surface. Spread each with avocado and scatter cheese over.
- Arrange salad leaves, carrot, capsicum and beef down the centre, and drizzle with chilli sauce. Roll up and place into sandwich press. Cook for 2 minutes or until heated through and the outside is golden and crisp. Cut in half to serve.
Speedy Moroccan Meatballs

Ingredients
- 2 X 400g cans Diced Tomato (800g)
- 2 Cloves Garlic (6g), crushed
- 2 Zucchinis (202g), coarsely grated
- 500g Lean Beef Mince
- 1 Teaspoon Smoked Paprika (2g)
- 4 Teaspoons Moroccan Seasoning (8g)
- 160g Baby Spinach
Method
- Place tomatoes, garlic and 1/2 cup water in a frying pan over a medium heat. Bring to the boil then reduce heat slightly so the mixture simmers.
- Meanwhile, squeeze excess moisture from zucchini and combine with mince, paprika and seasoning. Mix well. Roll mixture into small walnut-sized balls and drop into tomato sauce. Simmer for 5 minutes or until cooked through, turning occasionally. Add spinach and stir through to wilt.
- Divide between serving bowls, season with freshly ground black pepper and serve.
